Marina's Menu & Lifestyle: Prime Rib Roast from FAIRWAY MARKET for the Holidays

The holidays are now in full swing and Fairway Market is sharing a crowd-pleasing recipe with our readers. This "Prime Rib Roast with Red Wine & Mushroom Au Jus" is very easy to prepare and goes wonderfully with savory side dishes like salad, Brussels sprouts, roasted asparagus, pasta, and potatoes. Serve it at your next gathering or make it for Christmas dinner. All of the ingredients can be sourced at your Fairway Market. Serve the roast with your favorite red wine and celebrate!

Ingredients:

-2 tbsp black pepper

-2 tbsp kosher salt

-2 tbsp minced fresh rosemary

-2 tbsp garlic cloves, minced

-olive oil for rubbing

-1, 2 lb USDA Prime rib roast

-fat drippings from rib roast

-3 cups beef broth/stock

-1 cup red wine (dry red- match to what is being served with dinner)

-1 cup mixed mushrooms

-1 tbsp rosemary leaves, stripped from stems

-Drizzle of olive oil

-Salt and Pepper, to taste

-1/2 tsp. all-purpose flour (optional)

Method:

-Mix spices together and set aside.

-Cover prime rib all over with olive oil, then rub in spice mix. Loosely cover with plastic wrap, and refrigerate overnight.

-Remove from the fridge, and let roast come to room temperature before cooking.

-Preheat oven to 350 degrees. Cook in a roasting pan until a food thermometer inserted in the center of the roast reaches 130 degrees. Remove from pan, cover with foil and let rest.

-Place roasting pan with fat drippings on a double burner and heat to medium-high. Add oil and mushrooms to drippings and sauté until tender.

-Add-in beef broth/stock and red wine, making sure to scrape the bottom of the pan to loosen any browned bits of fat that may be stuck. (If a thicker gravy is desired, you can add 1/2 tsp of flour to the mixture and stir until thickened, simmering at a low-medium heat)

-Simmer until reduced by 1/3. Add in rosemary leaves, plus Salt and Pepper to taste. Serve in a gravy dish, or pour directly over rib roast before serving.
